Italian sausage and pepper & onion sandwiches -
An incredible evening meal for 4-8 people on the boat. It is very
easy to prepare and takes about an hour to cook, but it is worth
every minute. The smell of this cooking on the boat will have
everyone's mouth watering by the time it is served. This can be
prepared on the boat or in advance, for that matter, it can even
be cooked in advance. But I prefer to cook it on the boat.
Requires:
1. - Barbeque Grill (gas or charcoal)
2. - Disposable aluminum cooking tin (12" x 16")
3. - Aluminum Foil
4. - 6-12 Italian Rolls (steak rolls)
5. - 1 lb. Sweet Italian Sausage
6. - 1 lb Hot Italian Sausage
7. - 3 Green Peppers
8. - 3 Red Peppers
9. - 2 large onions
10. - 2 Cups of water
In a disposable aluminum cooking pan (rectangular box style)
cut up and add:
1 lb. Sweet Italian Sausage (cut into 3-4" lengths)
1 lb Hot Italian Sausage (cut into 3-4" lengths)
Chop (into strips ½" wide) and add 3 Green Peppers
Chop (into strips ½" wide) and add 3 Red Peppers
Chop (into strips ½" wide) 2 large white or yellow
onions
2 teaspoons of salt
A couple of pinches of garlic powder
2 Cups of water
Cover the tin with aluminum foil and place on grill and begin
to cook over a medium heat. Stir and toss occasionally, and add
a little water as needed (what is in the tin when you start will
steams off). Cook for about 1 hour to let the peppers and onions
break down as the sausage cooks. When ready, serve sausage on
sliced Italian roll and spoon on peppers, onions & gravy.
